British Pie Week 2016 takes place from 7th to 13th March.  Mark Fletcher, Resort Chef at Mere Golf Resort & Spa has created a fantastic Fish Pie recipe for you to try.

Mark Fletcher’s Fish Pie


  • 1250g Haddock – cut into chunks
  • 1250g Salmon – cut into chunks
  • 1250g Smoked Haddock – cut into chunks
  • 2500ml water / stock
  • 500ml White Wine
  • 150g Chopped Parsley
  • 250g Butter
  • 250g Flour
  • 875ml Cream
  • 8 tsp English Mustard
  • 5 tbsp Worcester Sauce
  • 4 tsp Anchovy Essence
  1. Poach haddock, salmon and smoked haddock in mixture of water and white wine for 2 minutes
  2. Drain fish and set aside the cooking liquid
  3. Make roux and add cooking liquid
  4. Simmer for 25 minutes – add cream and simmer for 10 minutes
  5. Season with mustard, Worcester Sauce and anchovy essence
  6. Fold the cooked fish through the sauce
  7. Mould and top with mashed potato, breadcrumbs and Cheddar cheese to finish 


Lemon Sole, Chorizo, New Potato Gnocchi & Tomatade


Recipe from: Laurence Tottingham, Development Chef for Oliver Kay Produce


  • 500g cooked & mashed new potato
  • 2 lemon sole trimmed and skinned both sides
  • 2 & a half lemons wrapped in muslin
  • 200g diced chorizo
  • 4 tbsp of Tomatade
  • 15g basil leaves chopped
  • 200g plain flour
  • Salt and pepper
  • Micro basil for garnish



1. Mix the cooked potato with the basil, flour & seasoning, roll in to small pillow shapes and blanch in seasoned water for 4 minutes

2. Fry the chorizo in a pan and add the Tomatade, let down with a little water to make a dressing

3. Fry the gnocchi in a pan till golden on both sides and keep warm

4. Pan fry the fish in clarified butter on both sides adding a good squeeze of lemon over it towards the end, garnish the dish with micro basil
